I’m mashing right now. I’m calling mine Weevil Fest. It’s been a hot summer! Mine is 70:30 Best Pils:Best Red X with 28 IBU of Spalt. I have a 5 minute and 0 minute addition to give some hop flavor. I’m using Diamond yeast. That sounds fantastic. My brewday was smooth and I created a nice-looking, light-amber wort that was clear going into the fermenter. The Edelweiss I measured out smelled amazing too. I'm also digging the character of this Omega German Lager 1... the aroma filled the whole kitchen.

I’m using Diamond yeast. It’s gonna be the best beer you ever brewed and you’ll never be able to recreate it without x% weevils. 😂 Definitely! I found weevils in 3 different base malts. I’ve got two in the freezer. I have about 40 lbs. of two-row that needs treatment next.

I’m using Diamond yeast. Well. This beer is not Festbier. It’s way maltier than a big Helles. I’d say it is a slightly light colored American Oktoberfest. It’s Munich malty with some crystal sweetness. But, it’s a decent beer and I enjoy drinking it. So, it’s got that going for it. I’m still calling it Weevil Fest!

Picked up a Weihenstephaner Festbier yesterday. Absolutely delicious. Very pale gold color, just past yellow. 5.8% ABV Hop bitterness hits you up front, followed by floral hop flavor, finishes with soft malt. Not sure you could find a more authentic one. Paulaner Ofest up toady. I expect it to be pretty different.

Picked up a Weihenstephaner Festbier yesterday. Absolutely delicious. Very pale gold color, just past yellow. 5.8% ABV Hop bitterness hits you up front, followed by floral hop flavor, finishes with soft malt. Not sure you could find a more authentic one. Paulaner Ofest up toady. I expect it to be pretty different. There are very few German beers I would turn my nose up on. I'm not much of a hefeweizen fan but otherwise I find all German beers delightful.

Otherwise it’s just ok, fairly drinkable without anything to wow over. I enjoyed the Warsteiner Fest better than Paulaner, but not even close to Weihenstephaner.

Had a Paulaner last night. Fortunately from a can, so in really good condition. About the same color as the W. A bit of soft malt up front, floral/herbal hops mid palate, finished dry but with some malt flavor. 6% ABV. Is that the one they refer to as Paulaner Obtoberfest Marzen? I seem to remember that one having more color to it. On the can it says "Oktoberfest Bier". I was expecting more of a marzen, but it's pretty much a festbier, as I understand them.
