Bavarian Dampfbier (Steam Beer), has me intrigued. With the whole Vienna SMASH think I've been yammering on about, I was considering doing something a little weird and SMASH'ing the Vienna with a Hefe yeast. Low and behold I learned about Dampf. Or perhaps 70/30 Vienna/Pilsner. 20 IBU Hallertau. Lalbrew German Wheat Yeast. <=5%. I need something different and slam worthy and this might be the trick.

So it will have the banana & clove character or no? For awhile I was tight with some local brewers who were all about Hefeweizen, that character and Wyeast 3068. We had a gathering and I brought one of my "non-brewing but beer loving friends". We get there and someone comes up from behind me and waves a cold 22-ounce bottle in front of me and I just knew it was a hefe (not my thing) and I winced a little bit but my friend grabbed the bottle and took a big swig. He swallows it and then HE winces... OMG, Bananas!?!? I laughed my butt off. I have heard of Dampfbier but I didn't know it had that character.

Ken, in your case, it might as well be a Belgian Yes, the banana clove thing will be there. But I intend on fermenting in the low 60's to keep those flavors/aromatics on the low side. It just sounds too interesting to not give it a try. If it turns out to be too much for me, I have plenty of help to knock off a keg haha. Dampfbier? Can't say I ever heard of it. One of my regrets in life is that I didn't take advantage of a German beer store that was around the corner from my base in Berlin. I went there once and iirc, I bought Alt bier. I had no idea what it was, just bought it. I mostly bought Berliner Kindl pils at the corner grocery because at the time it was about $4/case. I probably missed out on some good stuff. Circa 83-86.

And that bier store around the corner probably had all of them! In returnable bottles in those hard plastic case holders. Very industrial looking store, no frills.

Great. Another German beer style that I'vehaven't read about and interested in learning about and try to make. 😄 I accidentally learned about it by searching Pilsner with Hefe yeast and there you go. It definitely seems interesting and I think I'm going to do it this weekend. Keeping the recipe I posted as is. Nice and simple.

I had good luck last year with Munich Classic yeast with a hefeweizen. Fermented at room temp (high 60's-low 70's). Had a bit of clove and decent amount of banana. My first time using a dry yeast for a hefe.
