How did the brewday go? Does the beer seem Dampf? Not sure about Dampf but really really wet

So Lalbrew Munich Classic Wheat is a beast! Having pitched on Sunday with a lag well into Monday afternoon, this yeast went big and is now settling down. I am anxious to get this one into keg.

Aaaaaaahhhhhhhhh, Ken!!!! Don't be a-scared. I fermented at 60 just to keep the Banana, Clove, Ester on the DL. We'll see I got 1.052. Was shooting for 1.048 so it's a bit bigger than anticipated but will still teeter around 5%. Highly quaffable. Also going to gel the bitch to get super clear.

Will the yeast you use drop out? I'm envisioning a low-floccer but even with that it should eventually drop.

My Hefe using Munich Classic started dropping clear after about a month in the bottles! Still a bit hazy when I finished it off, but was on it's way to becoming a Kristallweizen!

If I cared for wheat beers, the normal haze wouldn't bother me at all. In general, no matter the style I don't get wrapped up about clarity and let time and temp do the trick. Even my lagers. But for this one, I want it clear as a bell.

Plus a campden for good measure. I don't use salts as of yet.

Dampfbier is in the keg and carbonating. It has a wonderful flavor reminiscent of a Belgian Blonde with adequate banana and clove but not over the top. Cloudy as expected and KNOX if blooming as I type. I can't wait to share a pic.
