I'll kick this one off: Tonight was oven-roasted balsamic marianted BSCB, loaded baked potato rounds, and roasted Brussel sprouts.
The potato rounds: sliced russet potatos (courtesy of my mandolin), baked in the oven until tender, then topped w/ crispy bacon (chopped), shredded medium cheddar, and sliced homegrown green onions, then back into the oven for 2-3 minutes until the cheese melted.
As a riff, I used the leftover bacon fat from cooking the bacon to baste the halved Brussel sprouts before they got a roasting in the oven. Turned out pretty damned good. The potato rounds were the star, but the sprouts turned out surprisingly well (Brussel sprouts don't make the dinner rotation here very often).
Tomorrow night: homemade pepperoni pizza. Homemade dough and sauce, with shredded Prov and Parm on standby. Wife and son's pie will get pepperoni and 'shrooms, and mine will get pepperoni, 'shrooms, and some chopped leftover bacon from tonight's potato rounds.

Tonight, we had: - oven-roasted, balsamic-marinated pr0k tenderloin medallions, (I had prepared horseradish w/ mine, wife and son had A1 w/ theirs)
- cinnamon-spiced baked scalloped Granny Smith apples,
- mashed potatoes w/ pr0k gravy (gravy was saved in the freezer from a prior dinner and reheated tonight),
- roasted Brussel sprouts for me (halved, lightly sprayed w/ cooking spray, then a generous dusting of Penzey's Chicago steak seasoning before roasting)
- leftover roasted cauliflower for wife and son Reviews were rave. Stomachs are full.
Tomorrow: spaghetti marinara w/ homemade meatballs, and garlic bread. Looking forward to that.

Tonight is my late MIL's recipe for chili. Coming up to a simmer now; kitchen is starting to smell real nice.
Will be served over spaghetti, with shredded cheddar, oyster crackers, and Tobasco on standby.
A nice option for a rather cold and gloomy day here.

Will be served over spaghetti, with shredded cheddar, oyster crackers, and Tobasco on standby. A nice option for a rather cold and gloomy day here. I made some last weekend and I just finished that batch for lunch today. I like to mix up some masa harina and water to make a slurry of sorts and add that late during the cook. I also added a bit of beer. No pasta, no oyster crackers... just shredded cheese and then I eat it with some good tortilla chips. I agree that it's great when it gets cold and gray. I have already made two batches of soup this fall too... my chicken tortilla soup recipe and then my chicken-parmesan-rosemary-white bean jobbie. I really need to come up with a catchy name for that one.

One of my favorite YT chefs had a vid on poor man's chicken fried steak and country gravy where he used ground beef hamburger as the steak -I thought that was brilliant so I'm going to try that this weekend.

I also just found a recipe for white chicken chili. I have had this at restaurants before and it can be very nice. If chili w/beans is enough to send someone off the rails, what will white chicken chili do to them?

Made pulled pork for tacos in the pressure cooker: 1 Costco pork roast cut into chunks, 2 small sweet onions cut into wedges, 1/2 cup salsa, 1 can Pabst Blue Ribbon, about 4 fat garlic cloves sliced, salt & freshly ground pepper. 45 minutes on the Meat/Stew setting at high pressure. Came out pretty good.
