Picked up a couple pounds of Dolphin to make fingers tonight. Just whipped up a spicy mustard sauce and also remoulade. Also saute'ing up some perogies. All this and cold beer will be a nice treat.

I wish I could get warm water fish up here. I'm pretty much addicted to Snapper, Group, Wahoo, Dorado/Dolphin/Mahi but I can't get any of it up here, generally. Sometimes a high-end place will carry some of that for $30 a pound or something. It's not the same. But I *do* have a contact in Miami (seafood wholesaler and former customer) and he told me he would send me some yellow or red snapper. I should really take him up on that.

Breakfast tonight. Homemade waffles, oven-roasted bacon, and scrambled eggs (for wife and son).
Butter, pure maple syrup, and powdered sugar (for wife and son) were on condiment standby.
Turned out well; have some leftover waffles and bacon for tomorrow's regularly-scheduled breakfast.

Dolphin - like Flipper - you guys eat Flipper? I always get this mixed up... it's dolphin in Florida, Dorado in Mexico (and other places) and Mahi in Hawaii. Poptop, tell me if I got that wrong. My FIL is very strict on this... he shows me a picture of one and I say "dorado!" and he says [deadpan] "dolphin". It's a cool-looking fish and the colors can vary... bright red, blue, green, yellow. I have no idea why they call this fish 'dolphin'. In FL, what do they call an actual dolphin? A porpoise?

Spaghetti marinara w/ homemade meatballs and garlic bread is on the docket.
Meatballs will get baked in the oven until mostly done, then into a warm pan of marinara to heat through until done.
A block of Parmesan will be on standby for microplaning onto the noodles, meatballs, and sauce.
Just the ticket on a rather cold and cloudy/gloomy Sunday evening.

My parents are 92 and 87 and my wife and I are bringing dinner to them tonight... spaghetti with homemade meatballs, a salad and some garlic bread. Bringing it up to them in about 10 minutes. Wife is at work. She cooked a roast the other day but I wanted a "Man dinner" tonight. Crumbled some roast in a pan, split some Ballparks lengthwise, added some BBQ sauce and Williams chili seasoning to the roast.
Got the dawgs blackened good and the roast pretty sticky, Put some fries in the air fryer 6mins before starting the BBQ dawgs, How's that lookin'?
Ready to grub down. BBQ Dawgs. I don't like Catsup/ketchup so I have some Heinz 57 for my 15 min air fryer fries. Please serve with an anti-coagulant beverage to keep from clogging arteries. Enjoy your man dinner!

Brisket for breakfast. We had brisket leftover and I made brisket grilled cheese sandwiches (my son's idea and quite a winner!). I had brisket tacos. Sincerely... you guys know how to do it.
