I believe the ‘clean room precautions’ prescribed for dry yeast is a bit over blown. Just my two cents. I’ve used an opened brick of Bry-97 for quite a while now. I usually pour out what I need and re-vacuum seal it. My vacuum sealer has been getting cantankerous lately so I just put it in a zip lock and push the air out. If someone buys a brick, just open the brick, pour it in a vacuum sealer bag, and vacuum seal it. Basta. Btw, "Cantankerous" would be an awesome beer name. It would have to be something with a bite like a double IPA or something... Cantankerous IIPA! As for the yeast, I assume you're right but I have a weird concept of yeast and I sort of get on my knees and bow to it knowing that I wouldn't have delicious beer without it. I feel the need to worship it, nourish it, treat it nicely and sweetly. Yeast have properties and characteristics that are mysterious and that we can't see so I always feel like it needs to be treated with the utmost respect. If a vac-sealed bag is enough to keep it happy and "clean", giddy up.

Off topic, but in Tapatalk there is a timeline feature that shows me all posts on a forum from newest to oldest. So, I can glance at all the new posts. I don’t need to go into sub-folders looking for new posts.
On the AHA Forum website there are unread and updated links to do something similar.

Off topic, but in Tapatalk there is a timeline feature that shows me all posts on a forum from newest to oldest. So, I can glance at all the new posts. I don’t need to go into sub-folders looking for new posts. On the AHA Forum website there are unread and updated links to do something similar. I understand. It's just that things are broken down very fine over there and I usually end up posting in the GENERAL area even if I'm asking about a topic that has it's own subforum. Not always but often. It's one reason I made this place so simple. BREWING, RECIPES, NON-BREWING. Simple. You can't get lost. But if you do get lost, please report to the gift shop.

I'm not complaining but I do not prefer that amount of granularity and a number of others (especially those who helped me set up this place) had similar ideas. When I find a thread over there that I like, I often don't remember where I saw it because of all the little compartments. It clearly works and I love the content there. That forum is more of a mall where this one is more of a quickie-mart.

I’m skeptical. I think they may have taken another existing yeast (Diamond?) and taken license by repackaging it and renaming it (Baja) for a market they would like tap into (Mexican Lager yeast). If you look at the MoreBeer page there is a question/answer about Diamond yeast. Why? That question is dated from May 2020 which is before Baja yeast was a product. Why copy that to the Baja page? Which begs the question, is CellarScience an actual yeast lab like Fermentis or just a re-packager ala Mangrove Jack's? I assumed they were the same as MJ, just repackaging yeast under a different name. Now, I'm not so sure. I recently noticed they now have a dry Hornindal yeast. I don't know of anyone else selling dry Hornindal. Unfortunately, it's only available in brewery size at the moment.
