Here's their response...
It's produced by AEB Group and repackaged by Cellar Science. The AEB Group describes it thusly:

Considering that I have yet to find a dry yeast that's really close to the liquid equivalent, don't get your hopes up too soon Do you have dry yeasts that you like? Not close means different, not necessarily bad.

Any word on 12 g packs yet? Sent from my iPhone using Tapatalk When I read the above (regarding the smaller packs), I got the impression that it would be awhile. Someone on AHA bought the big package and plans to use fresh dry yeast on each batch.

I have a BSG account and might order a brick in the near future to try out and split amongst my club.

I have a BSG account and might order a brick in the near future to try out and split amongst my club. Then you can be a distributor for the rest of us. Measure it out in 12g vac-sealed packs and sell it to your brew friends! My hesitation on buying the brick would be that I don't care for the results of the yeast and now I have $100 of dry yeast laying around that I don't like. Possibly not a concern but my preference would be to test drive a 12g pack before diving in.

Sent from my iPhone using Tapatalk I was thinking about this and I would totally participate but then I thought... what's the best way to open the brick and repackage it in a sanitized way? I have never done that. When I open a package of dry yeast I use sanitized scissors and drop the yeast into the wort, maybe flick the package to make sure it's all out of there and walk away. How to be sure the destination package is sanitized.

I believe the ‘clean room precautions’ prescribed for dry yeast is a bit over blown. Just my two cents.
I’ve used an opened brick of Bry-97 for quite a while now. I usually pour out what I need and re-vacuum seal it. My vacuum sealer has been getting cantankerous lately so I just put it in a zip lock and push the air out.
If someone buys a brick, just open the brick, pour it in a vacuum sealer bag, and vacuum seal it. Basta.
