I think it will be fine. If you have a router, you could always route out some of the center to make a sort of dish shape. you're asking a lot of Ken, now!

What is the diameter of a brewing bucket? Sacrifice an old brewing bucket and cut off the bottom. We know that is HDPE, and it is food safe and can stand 180°. A standard brewing bucket is about 12" across on the top and the bottom is about 10½"... too small. Good idea though. On Sunday I was walking around the house with a tape measure. Out to the garage, the shed, down to the basement... nothing. I realized that it would be easier to make something than find something.

My cutting board just arrived. 15x20. I looked at a couple other videos similar to what JKor posted. Drill a hole in the center of the board. Create a length of wood that represents the radius of the circle. Fasten the one end in the hole made for the center, on the other end drill a hole for the blade to go through and fasten that end to the saw either with hardware if possible or two-way tape. It's that last part that might be tricky to do. I wonder if it would be best to try this method or if I should just trace the circle using my old cap and just free-hand the cut. The weather here this weekend calls for spotty showers the whole weekend so it's likely I will attack this project over the weekend and possibly use it to brew on Sunday or Monday.
If you go to the 1-minute mark of the vid below, there is something similar...

Okay, first off... jigsaw through HDPE is like buttah. Buttah. My work is not perfect but this is no less perfect than the foam board/foil jobbie and cleaning this will be nice and easy. This fits snugly into the MT at the typical mash level and although it's not perfect, neither were the areas on the old one with bunched up foil here and there. Guys, thank you for the ideas and direction. Easier than I thought. Now... as long as I don't poison myself.

Ha. JKor is hot for the knob. You gotta have the knob (TWSS) because you can't pull it out of there otherwise. Oh man, this thing went downhill fast.

May want to put a ss screw on your knob. I would not want a zinc plated or unplated screw from my knob touching my mash.

I kind of thought about that. I'll look for one. Until then I might take the knob off and just use something I can stick in the hole (again with the Public House talk) and yank it out.

I would not use anything other than a stainless steel knob on the top side either. (aluminum would be OK too) If you are going to the trouble of low O2 brewing, makes sense to not risk some unknown metal with an unknown finish or coating near your beer.
My local Ace Hardware has an impressive collection of stainless steel hardware.

Okay. I am brewing either Sunday or Monday and I'll take off the hardware until I have something suitable. Or... I'll go with no hardware and just fish it out with a hook made from something. Thanks guys. Much appreciated.
