I had a pouch of Omega 113 (Mexican Lager) in my fridge that I knew was old but when I blew the dust off of it the date was "USE BY MARCH 2023". I made an SNS starter with it on Tuesday afternoon thinking that if it didn't wake up I would use the dry Baja yeast I also have in the fridge. I've been watching this thing and when I got up this morning it was active. So making a simple beer late this afternoon .. 65% Avangard Pils, 35% Swaen Dark Munich (8L), Magnum hops early, Hallertau Mittelfruh hops late, Omega 113. 5%, SRM 6, IBU 24. Haven't brewed in a couple months so looking forward to this.

Nice. Lager Yeast keeps well. Kept a pitch of WLP830 for 18 months after the "best pitch by" date.

If the look of the yeast or if a sniff test told me not to use it, I would have tossed it out. It seems to have stayed in pretty good shape. Cheers Lefty.

This beer fermented quickly and is now in a warmer spot to finish up and drop out. I drew up a bunch of lager recipes that I would ordinarily make with this Mexican yeast. A gold lager like Modelo, one closer to Victoria (a bit more color), a darker one like Negra Modelo, something I have been making called "Blonde Redhead" and a few others. I drew up a helles recipe too .. I can't see how a Mexican lager strain would ruin a helles so let's see how that goes. I have a bunch of Avangard Pils, lots of Vienna, Munich 1 and 2 and a bunch of hops ready to go. Cheers Beerheads.

Yesterday I made batch #3 with this Omega 113. For a yeast that was over a year past its date .. it's really on a mission. I pitched yesterday around 5pm and by about 7pm I had CO2 in the keg and bubbles in the sanitizer. I have five more batches planned for this yeast.
