My Country Helles is in the fermenter.
My recipe was 78% Best Pils 11% Swaen Vienna 11% Best Munich 17 IBU Edelweiss 2019 at 60 8.5 IBU Edelweiss 2019 at 15 34/70 Slurry
My water was 75 CA, 6 Mg, 14 Na, 81 SO4, 72 Cl
My OG was 1052. I forgot to heat my sparge water. I think that’s why I missed the SG by a point.
I mention the 2019 Edelweiss because when I bought it the description said he was missing one ingredient and had to substitute. So, my Edelweiss might be slightly different.

Funny you mention the Edelweiss because I remember reading something like that on the Hop Heaven FB page. Something like... "This year's Edelweiss mix is slightly different from last year so try them in your favorite recipe and let us know how we did!". I just went and checked my Edelweiss and sure enough they're 2019. I like them. Also, I almost always use Vienna or Munich in a Helles but I don't know that I have ever used both. The recipe looks good. I'm going to guess that my SO4 and Cl numbers are lower and probably favor chloride more than sulfate.

Dwain built the water based on recommendation from Kai’s website for Country Helles. Country Helles is closer to Dort. I think that accounts for the extra SO4.

I based the recipe off pg 5 of the (v3) LoDo paper. www.germanbrewing.net/docs/On_Brewing_Bavarian_Helles_v3.pdfTommy didn’t have Cara so I subbed 5% more Munich for it. I don’t use acid malt so I just added 1% more each of Vienna and Munich. Since “Helles Export is generally brewed slightly higher in extract and with lower percentages of specialty malts” and “Country Helles is a more robust interpretation of Helles”, I figured ≈ ‘Country Helles Export’. It says “try tweaking the recipe to your tastes” so I did. 😂 I got 1/2 lb of the ‘22 Edelweiss and I am using Sugar Creek malts so we’ll see if there’s a difference during the taste test. I’ll brew some more Lagers in ‘23 to use the rest of the hops. He also sent me some Cashmere which I have never used so I am planning an English IPA to try them. My Altbier keg is getting light so I may get another brew in this yr after all. That’s no joke. I woke up to 3°F outside air temp this AM.
I wouldn’t have left the house today had I not needed to run to the pharmacy real quick. It was brutal.
My cat, who is generally an outside cat, has been going to the door but when I open it he sniffs a little then turns around and gets on the couch. He went out once and was back inside in about 5 minutes. He’s snoozing by the fireplace now. 😂

Congrats on the helles and FOR SURE on the weather. At least in Chicago we're used to this and know it's coming. I have family in Georgia and I know it's a complete shock to the system for you guys because it's just not normal. I went to the store yesterday afternoon and the roads were snowy/icy but manageable. I shopped and came out of the store with my cart and a YUUUUUGE gust of wind hit me from the side and it was a real WHOA NELLIE! moment. I'm pretty sure there were people sitting in cars in the parking lot applauding and looking at me like entertainment. Nine of my 10 kegs still have beer in them, thank Jeebus. I would not attempt to brew in this weather. Merry Christmas & Happy Holidays Beerheads!

Some friends and I ran 17 miles today. We ran one way so we could have the wind at our backs all the time. It was great and we were remarking how warm we were and how sweaty we all got. There was one 1/3 mile stretch we had to run into the wind. That bit was painful. It was 9F when we started the run. He we are at the end.

Have used the Edelweiss hops from Hop Heaven in the past, really liked them. Now I make my own blend every year when I stock up on the new crop year hops from YVH, I will take some of the prior year hops and make a "lager blend". First year I did this, I made a blend based on what I figured Edelweiss was based on the hops sold on the eBay site, so it was Mt. Hood, Liberty, Saaz, Mitt, Tettnang and I want to say Loral. Last year I made a simple blend of Mitt, Saphir and Liberty.

Did you bitter with something "known" so you knew the exact AA% and then add your blend later in the boil because the combined AA% of the late hops wouldn't matter?

You can average the AA%’s if you know how much of each you use and blend them well.

Well, my Helles is clear and after a few pints…. I dunno. Not *bad* but I’m hoping it matures into something better.
We need to get together and share a pint or two.
