Maybe hard to believe but I have never used 34/70. I would ordinarily use 2124 or Diamond but I'm also not much of a dry yeast fan. I have ONE packet of 34/70 that I just bought this past winter and I also have WL940 which will have a started made for it shortly. The 34/70 will also be used... maybe first or maybe later. I have heard stories that it starts slow. Should I... 1) rehydrate? 2) Just sprinkle? 3) Either 1 or 2 but make sure it's got plenty of O2? 4) pick up another pack and pitch two? I certainly don't want to take any chances of slow starts, underpitching, unwanted flavors, etc. My SGs are typically 1.045 to 1.050. Thanks & cheers Beerheads.

I give it a blast of oxygen and just sprinkle it on the wort... it does start a bit slow but no problems with it...

It's the only lager yeast I've ever used. BUT, I've only used it under pressure. One pack works fine with pressure but it seems most people (from what I read) use 2 for regular lager fermentation.

I don't rehydrate because the packet says to sprinkle it in.

Okay, good stuff. Even if it does start slower, I assume that will only be on the first batch and then subsequent batches will take off as normal. Cheers and thanks.

One thing I like about 34/70 is that it’s like the Swiss Army Knife of yeast. It makes a good beer even at 60-65°F.

I've heard that about 2124 (both are from Weihenstephan, correct?) and I think Diamond has the same characteristics. I would be using it in a fermenter that's in a fridge but it's always good to know you could swing that warmer fermentation.

90% of the time I just sprinkle on top, 2 packs, and nothing else. No oxygen or swirling.

2 packs of 34/70 around here is probably more expensive than a pack of liquid yeast.

2 packs of 34/70 around here is probably more expensive than a pack of liquid yeast. True, I stocked up before prices increased. To be fair though, you will need a starter to get that liquid up to proper pitching rates so I would say dry is still cheaper.
