I don't like where this beer is going. Even though fermentation is very active, it's only dropped 22 points in a day and a half. Mind you, I'm using Hornindal Kveik yeast. The 1.070 OG should be nearly done but it's not close. The sample I took seems ok but I have some serious doubts. Maybe at least I can narrow it down to this particular fermenter. I believe I used the same one on the last bad batch.

Dumped another batch. Promptly hit the fermenter with very hot water and Oxy. Let it sit for a couple of hours then hit it with bleach. This is really pissing me off.
I'm trying to isolate this. Might use this fermenter this weekend for a basic pale to see what happens.

Dumped another batch. Promptly hit the fermenter with very hot water and Oxy. Let it sit for a couple of hours then hit it with bleach. This is really pissing me off. I'm trying to isolate this. Might use this fermenter this weekend for a basic pale to see what happens. After bleaching the crap out of this fermenter the past few days, I hit it with starsan this morning and brewed an amber ale. So far, so good - fermentation took off quickly and strong. I used dry Voss and it's behaving as it should. In the infected beers, fermentation was slow to start and very sluggish. This one has dropped 6 points in about 5 hours since pitching. Fingers crossed...

OK, so in 14 hours, I dropped 40 points. Very encouraging - acting like a typical Kveik fermentation. Smells good, too.

In hindsight, I believe the infection was building up over time. I made a couple of beers in late December/early January that weren't quite right. They were drinkable but they just seemed off - very dry and low in flavor. It got progressively worse after that.

Switched from Star San to iodophor and it knocked it out. Iodophor will kill stuff Star San won't.

I just bought some Saniclean after using Iodophors for a while now thinking a change up might do me some good. Once i run thru it I’ll move back to Iodophors.

I switch off between the two for that very reason. I used to use iodophor but switched to starsan a while back. I still have a big bottle so I think I'll start switching back and forth as well
