I saw this awhile ago and it intrigued me. I made it but I went rogue on some of the seasoning. I added onion, garlic, salt, pepper, smoked paprika and cumin. Egg, I used plain panko, etc. I used a pound of ground chicken and made a bunch of these and had them with a big salad for dinner. Here's how they came out:

I did something similar but with leftover chicken thighs. I made a crab cake or salmon patty kind of thing with the diced chicken, cheese, egg, mayo, dijon, seasoning, then breaded and fried the croquettes.
They were very good but I will definitely try this meatball.

Mmm, crabby patties! I'm a big fan of crab cakes so that would be awesome.
