We recently had some guys from Crisp on the podcast talking about the heritage malts they've just released. In order to compare them, next week I'm starting on a series of beers with them. I'll brew identical WCIPA with 3 of the 4 and compare the flavors from the malt. Anybody here used any of them yet and have comments or advice?

I was thinking of picking up a sack of Chevallier in the near future. I've heard good things about it.

curious why you're making WCIPA to evaluate a malt, seems like a blonde or simple smash recipe would be better suited

I'll be doing the same recipe with all 3 to compare them. And it's one of the styles Crisp has on their website for it. Just because it's a hoppy beer doesn't mean the malt isn't there.

Start out with the Chevallier. I'd be interested to see if it's worth $90/sack. I might pick one up next month.
