September 18 (the start of this years canceled Oktoberfest) is just 8.5 weeks away. I will need to brew in the next 1-2 weeks to have a perfect beer by that date. Of course it’ll still be roasting here then. I really need a Festbier about 30 days later. So, the beer may last a while if the heat doesn’t break. My birthday! It makes for a longer brew day but I will run errands or do something else productive.

It makes for a longer brew day but I will run errands or do something else productive. I think I tried a 90-minute mash one time and noticed no difference. I should mention too that yeast strain plays a role for sure. I was using 838 this past winter and getting beers finishing around 1.006-1.008 so there's that angle too. I have a small bottle of amylase enzyme that I don't think I have used at all. I spoke with the owner of a LHBS that I use and asked her if she had used it and she said that she will split the dosage (1/2 tsp in 5 gallons) in half... half in the mash and half in the fermenter. Seems easy enough.

Just got word that the local Oktoberfest that is held by the German Club is going to happen. My favorite local festival. It's very authentic, great food and drink, just scaled down in size and duration, with some rides and games for families. Volunteering this year to pour beer once again.
Having been to the fest in Munich, it's as close as the real thing. Cannot wait.
Also, I've been looking for something to brew, so going to do the Recipe Ken shared. Happened to pick up some diamond yeast, and give it a whirl.

There's something hinkey about that link. Try THIS ONE. I like things like this. As Americans (especially those who have not been to the big dance), it doesn't take much. Some decent German-inspired beer, some decent German-inspired food, some funny hats and pants and an Oompah band and I'm pretty good. We went to one in Burlington, VT and a few around here put on by various towns. We also went to something called WURSTFEST in New Braunfels, TX which was really fun and very big. Always a good time.

I had a beer with the fellas settling scores and lying about our round of golf once and was then stopped as I was leaving. I was not DUI but swore never again.

I’m brewing my Festbier today. I went with 62:38 Best Pilsner to Weyermann Dark Munich. 30 IBU of Hallertau with 30 minutes remaining in the boil and 34/70 yeast.
Frankly, the ratio of Pilsner to Munich 2 was chosen by what I had in inventory as much as any other factor.
I made a beer very similar to this with Weyermann Light Munich last year. I am looking forward to trying this one.
I am doing a 90 minute mash to help it dry out a smidge.
