I thought I would start this thread here instead of in the cooking section since I don't have a recipe.
I'm wanting some sort of italian pasta salad type dish. I typically do not make stuff up from scratch. So if you guys have any suggestions that would be great.
I'm wanting pasta, some sort of meat, appropriate olives.....and whatever you might add.
Any thoughts/suggestions?

Mmm, I feel like I have had something like this at a summer backyard cookout. Spiral pasta, chunks of cheese, chunks of salami, olives, sun-dried tomatoes, roasted red peppers and an italian dressing.

That looks very good! I'd leave out the Kale... or replace it with something actually edible like some parsley or fresh spinach for color!

I ended up winging it.
Spiral pasta, tomato, artichoke hearts, black olives, cucumber, red onion, moz cheese, bell peppers, diced salami, and some of that Italian dressing mix that you make yourself.
This is really hitting the spot.There is enough to last us for SEVERAL days.

It'd be pretty hard to go wrong here! Just about anything you'd find on an antipasto tray would be good!

Yeah, I have definitely had versions of this. I'm more likely to EAT it than MAKE it.

Ooh, that looks great. As I age like a fine wine ( ) I realize that there are some simple, fresh and traditional recipes for delicious pasta and they don't have to be complicated. I have no idea if the guanciale is going to be found anywhere (I have never heard of it) so I wonder what would make a good substitute. Pancetta? I'm totally making this... I think.

I was thinking the same thing. I've got some home cured pancetta. But I don't know where to source this pasta, and I don't think my pasta attachments are big enough.

Would this dish work with other pastas, like plain ol' spaghetti, or a tube pasta like penne, ziti, rigatoni? I ask as the sauce looks awesome, and might work with other pastas if bucatini is unavailable.
Also, what pasta attachments do you have (I'm guessing they're for a KitchenAid type mixer)?

Nope... not a KA attachment. Too damn expensive. Picked up a $29 hand cranked model on Amazon. Probably saved $200. But it just has spaghetti and fettuccine cutters. Bucatini is "hollow", but I really don't see a reason why you couldn't use another pasta. I think a penne would be good. Allows some of the sauce to get inside of the noodle. It's just... I've never had bucatini before and would like to try it. Hell, I'm sure there is an extruder that you can use to make it. There really isn't anything better than home made pasta noodles... my son just made spaghetti noodles on Sunday for dinner.
