Well, decided to make a steak dinner for the GF and I, our birthdays are early next week (born 2 days apart, 8 year difference).
Decided to make some mashed potatoes. I'm sure this isnt a original idea, but these are killer.
Take all the spuds you need, and bake them. I useally bake uncovered, coat with olive oil, and season with S+P.
In the oven, 425 for 60 minutes. Turn every 20 minutes.
Scoop out all the goodness, with some skins thrown in into a pot.
For 5 lbs of potatoes, I use a half stick of butter, and stir in with the potatoes.
Heat up some milk in a separate pot(whole works best) til it's hot enough to cause discomfort to your fingers.
Mix to your desired constantly. Add salt and pepper to taste.
It's a lot a work, but very tasty.

Hadn't thought to bake the potato instead of boiling. I'd bet that would keep some good starchy goodness in the dish.

I'd bet that would keep some good starchy goodness in the dish. oh it does. works well for topping a shepherds pie; if going that route, I'll brush a lightly beaten egg on top before browning the potatoes in the oven. gets it golden brown and delicious. but by themselves, Its heavenly.
