A lot of boxed mixes call for oil and water, along with eggs, when making the batter. Made a batch a while back, using Betty Crocker fudge brownie boxed mix, and the results were less than stellar. Overly cake-like, kinda bland, and overall just not that good. I figured there was much room for improvement.
Did some searching on the intertubez, and spying a second box of said mix in the pantry, decided to change out the oil and water. So, on a whim, today became brownie day.
What I did was sub out the oil (box called for 1/2 cup) for 1 stick of butter (melted), and instead of water (box called for 3 tbsp), I used 1/4 cup whole milk. Kept the eggs at 2 as specified. Mixed as normal, baked per box directions (did sprinkle on some chopped walnuts immediately before baking), and once cooled off, cut a piece for me and one for my wife.
Wife said they were absolutely fantastic; must've been magical, because said brownies seemed to vanish off our plates before our eyes.
Just wanted to share.
