I just looked closer at that recipe that Drez posted and realized it's a triple decoction. Decoction is something I have never done but I had planned to start a new thread, still can, about it. I recently came across this recipe and you can see the decoction step it has. It has me thinking of giving something like this a try. My system does not make decoction easy but this method looks like something I could easily do with a induction plate in the brewery.

Interesting. I believe I have tried a decoction 3-4 times. Just a single. Take x amount of the thickest part of the mash (which I always found to be a wild way to describe it), add it to a pot and bring it to a boil and stir constantly for 10 minutes, add it back to the main mash. I noticed NOTHING different in the finished beer. I may have been expecting the sky to part and a nude supermodel to walk through it but I honestly saw no difference so I have not attempted it since. But that description sounds kind of like a reverse decoction or something. Definitely in a difference sequence.

I had exactly the same thought after seeing that same recipe. Seems like a much easier, less messy way to do a decoction. KC Bier Co. is also pretty adamant about maintaining German authenticity in their beers, too.

Done double decoction mashes in the past. It's a time consuming process, and can be messed up really quick if your not paying attention.
Aa far as decoction formula, scores this from a old BrewingTV episode: 1 quart of thick mash per pound of grist. With some liquid to help prevent scorching.
Did a hefe this way many moons ago. Was worth the 10+ hour brewday, but- dont have that kinda time 😄

👍 When I do these small batches the brewdays are short, the fermentation is fast, and the beers clear pretty quick in bottles.
If they’re ready they’re ready but if not, oh well. I have a cpl kegs of my full batches (Brown Ale and Landbier) and one keg conditioning (Summer Ale) so the party will happen with or without a Vienna Lager. 😂

The Vienna love is so overwhelming and so in time for Spring weather I have the Vienna that I described as "different" (because it contained a pound of CaraMunich) ready to hit the taps. The recipe was given to me by a commercial brewer and I made the beer on 2/21 so it's been lagering for about six weeks-ish. I'll try to snap a pic when I get it into a glass.
