In an attempt to distance my Vienna Lager from Dunkels and other dark lagers, I present this recipe which has a bit less Carafa in the recipe so the color would be a bit lighter. I have noticed a number of craft Vienna Lagers looking more like an amber lager (an SRM of more like 8 as opposed to being darker than that) and I have gotten recipes for some of those beers from the brewers. But here, I have what amounts to Jamil's Vienna with just a bit less Carafa. The recipe is solid and I have it many, many times in the past with good results. I am making it this weekend with 838.

Hold the phone. I just went back and looked at a recipe I got from The Tap in Bloomington, IN for their Brickyard Vienna. It's a delicious beer but it's a little unconventional in that it has 10% CaraMunich in it. When I saw that I shook my head a little bit (mostly because I would not draw the recipe up that way) but that doesn't mean it's wrong. I am posting that recipe here. The original recipe used Perle for bittering which I do not have so I subbed with Northern Brewer. The last hop addition is Saaz and I just got some from Hop heaven that I would use. So... I might make this one instead. Here's a shot of the finished product...

Great minds think alike yes? I have been working on a Vienna Lager that will kick off a new pack of Bayern. I am considering excluding carafa completely. Some of my past Vienna's were too dark and/or I tasted too much roast. My tastes for a while now are on the lighter color side. So right now I have a 5/4/2 grain bill: Vienna, Pilsner/Munich with only 1 ounce of Carafa III. 8.7 estimated SRM.

I really do like this commercial beer when I have had it so I should probably just close my eyes and make it as the brewer described. On my first lager attempt this weekend, I'm keeping it simple. I'm thinking 8# of pilsner malt, 3# Vienna, and .5# acid malt. Maybe an ounce of Magnum for 30 and an ounce HM at 10 and 5. Possibly another ounce or two of HM or Mandarina Bavarian at flame out. In case you guys didn't realize it by now, I like to wing it.

Actually, I'm using Edelweiss, not Hallertau. Don't know how I messed that up. Brewing right now. I have some "on-deck" beers coming up with Edelweiss and I'm looking forward to them. I have not brewed now since 1/23 because I am doing some home improvements and the weather has been truly sucky. Below zero temps here over this past weekend and next weekend looks like single-digit highs as well so I will probably not brew until the weather cooperates. This doesn't happen here very often but I have plenty of beer so I think it's all good.

We had more snow this past weekend and the current temp right now is 0°. We have a storm approaching today that will bring another 8-13" of snow before noon tomorrow. Snow expected 4 of the next seven days. But. But. As of right now Sunday shows a high of 35° so I am hopeful to get a brewday in with this Vienna Lager. There is supposed to be a "wintry mix" but I can deal with that. That would make it around 1 month since I last brewed.

It's been cold here the past 4-5 days - only getting to upper 40's. I'll be brewing something this weekend - not quite sure what, though.

I haven't brewed since November 19th Whoa! Wha hapeen? I mean... I get it... brewing is often the lowest priority. Do you normally take the winters off? I'm not really sure to be honest. Holidays, weather, other stuff I guess. I had no idea it had been that long but I guess it explains why I only have 2 beers on tap! I specifically bought an electric all-in-one to be able to brew indoors year round but I need to figure a way to deal with steam. Wife wasn't a huge proponent of me brewing in the bathrooms to take advantage of the exhaust fan
