I think Darter originally posted this recipe. I will post the video here and underneath I have some notes on the slightly different way I make it. Hey, nice. The video embed works. Just copy a URL from YT and paste it here. No tags necessary. Anyway, for this I use boneless and skinless thighs which I'm sure make a difference. But I like how they come out and I would rather not deal with skin and bones. Also, the reduction can be poured over the chicken and rice and it has PLENTY of fat in it without the skin. She uses a bay leaf, I skip it. She tops it with cilantro, I use chopped green onion. Otherwise I follow her directions. This is very tasty and the whole family loves it.
