We've made this soup a couple of times. It is a spot-on clone of Carrabba's. It's a really easy-to-make recipe. Carrabba's uses spicy sausage, but my wife doesn't do spicy, so we make it with mild sausage, and I add red pepper flakes to mine: copykat.com/carrabbas-sausage-and-lentil-soup/Edit: Copied the recipe into this post in case it ever disappears from that site! Carrabba's Sausage and Lentil Soup Ingredients 1 cup white onion diced 1/2 cup carrot diced 1/2 cup celery diced 3 cloves garlic minced 1/2 teaspoons salt 2 tablespoons butter or olive oil 1 pound Italian sausage 48 ounces low sodium chicken broth 1 1/2 teaspoons Italian seasoning 1 14.5 ounce can diced tomatoes 1 cup brown lentils Instructions In a large pot add onions, carrots, garlic, and celery and either butter or vegetable oil. Saute until the onions are transparent. Add sausage, and cook until browned. If the sausage is fairly lean drain the excess oil. Add chicken broth, Italian seasoning, diced tomatoes and brown lentils. Cover with lid. And simmer for about 1 hour. You may want to add some additional water if too much water cooks out during the cooking process. Nutrition Calories: 353kcal | Carbohydrates: 20g | Protein: 18g | Fat: 22g | Saturated Fat: 7g | Cholesterol: 43mg | Sodium: 624mg | Potassium: 594mg | Fiber: 7g | Sugar: 2g | Vitamin A: 1375IU | Vitamin C: 4.7mg | Calcium: 42mg | Iron: 2.9mg Notes: I doubled up the Italian seasoning (I used Penzey's Tuscan Sunset) I used full-sodium broth! Any variety of lentils will work! (First time, couldn't find brown, used green!)

Mmm, that looks good. I'm making soup tonight and I see that it's NOT in the cookbook so I need to add it.
