Last weekend I tried a hybrid smoker/oven method. I put the butt on the smoker for about 8 hours then wrapped it an put it in a low oven (225F) and left it overnight. I accidentally left it in there longer than I meant to, probably 14 hours, but it still came out great. I'm sure 8hrs would have been plenty. I think I'm going to stick with this. Tending to the smoker for 12-14 hours gets to be a major PITA and mine usually runs out of fuel around the 8 hour mark. Instead of reloading I'll just go to the over, way easier. You get all the smokey goodness you need within 8 hours anyway.

I have done this also. After 4 - 5 hours there is no more smoke uptake so all you are doing is building bark. My UDS goes 12-14+ on a load but after that I will use the oven or whatever.

I usually smoke my pork butts for about 8 hours, wrap them in foil and then I have a box with insulation (we get them from Home Chef) and put it in there and pack it with extra insulation and close the box overnight. Retains heat well and is enough to carry it through the next morning. Wake up and shred. I've also put the wrapped butt in a crockpot on low overnight. It's all the same. By morning, the bone just slides right out and pulling it is easy. Your doing the exact same thing.
TBH, the pork butt is only going to take on so much smoke. 8 hours is sufficient for that, but you need more time to break down the collagen. Using the oven/crock/insulated box is all the same thing.
