Beginning mis-en-place for a Friday or Saturday batch of very light (for me) 3711 Saison with the anticipation of using this cake for a DuPont'ish Moinette. I'll take the 3711 over 565 any day. 5# Belgian Pils 4# Pale Malt 1/2# Spelt 1/2# Sugar Still deciding if I want to go all Noble such as a Tett/Hallertau combo or do a bittering charge with something like Magnum and drop an ounce or two of NZ Pacific Jade at whirlpool. Do you use flaked spelt or malted? I did not even know there was flaked spelt. I just kegged a lager with 2#'s of malted spelt. Looking forward to Saturday to taste it.

I use malted spelt and a little goes a long way. To me there is much more flavor than regular wheat and I enjoy the body it brings to a nice dry Saison.

Gave the porter a try before I added some bourbon soaked cinnamon and vanilla. I really like this flex and the ease of taking samples. It also makes spunding very easy.

IPA is now in the primary, mingling with some fresh 1028 London Ale yeast. Ended up using the following hopping schedule: 3oz Columbus (pellets, ~13.5%AA): 2oz to bitter, and 0.5oz at 10 minutes and hopstand (20-min) 4oz Cascade (pellets, ~5% AA): 1oz at 15, 10, 5, and hopstand (20-min) I have to say, the garage smelled nice during the boil, as did the basement during the hopstand and subsequent chilling. Looking forward to this one for Memorial Day.

LAIII is an interesting twist on that recipe. I like it. Should be a nice easy drinker. I have always done well with the 1318. For me it makes for a nice smooth, what I think of as the classic British ordinary bitter style of flavor. It seems this is also a favorite yeast among the NEIPA brewers. Not sure why. But these days it seems to be found in the fridge more and with fresh dates at the LHBS. Maybe one of the whopper cell count yeast suppliers will pick it up. White Labs does not have an equivalent.

I like 1318 a lot but oddly I do not like it in my NEIPAs. I know many rave about it and say it is THE yeast to use but just does not do it for me. There was a Mild recipe from the blue board that said 1318 was the best yeast for that beer and I agree. Great, versatile yeast for sure.

I'm not sure I have met an English ale strain that I didn't like. 1098, 1099, 1028, 1968, 1469, 1318, I'll throw 1728 on that list... they all have a certain character that I have called "bready" but that's a lazy description. There is something great about the aroma and flavor of a beer brewed with these yeast strains. Zymot, how many IBUs did your MLPA have?

Beersmith calculated it around 30 IBU range. (30 minute boil with 1.75 oz Perle hops) My hydro sample tells me I got the balance that I wanted. (and that Super-Kleer K.C. works.
