I ask because it was this beer that told me that my helles was lacking. The reason was the dry finish that they got in the beer but the body, mouthfeel, etc. was perfect as well. Malty lager, dry finish. The beer had that in a very distinct way. Now that you're a pro brewer do you have any idea how they did that? This thread is open to everyone, of course, but I wanted to ask Lefty because he sent the beer to me and may be familiar with it. I thought the trick might be water composition but I don't really think so. I'm wondering if it could be a crazy long mash, step mash schedule or even a smidge of sugar in the wort to bring the final gravity down. I drink it when I can. I've talked to the brewer since sending it to you. He's told me that beer has a single infusion nearly all pilsner and a dash of Vienna and melanoidin;also a bit of acidluated raindrop mash pH. Hops at 60, 10 and 5. Didnt specify on what.
The water is not as soft as you would think; fair amount of chloride in it. The water around here is middle of the road, but isnt well suited for a helles out the tap.
