I have this Bordertown Lager on tap now. In the beer I used 1g of CaSO4 and 2g of CaCl. With those amounts, the Ca was 60, the chloride was 53 and the SO4 was 45. The beer tasted thin and it seemed to lack depth. So I did something I have done before... I back-chlorided it. I boiled some water, turned it off and let it cool a bit and then added 1g of CaCl. Let that sit and then opened the keg and just poured it in. More on that below. It totally changed the beer. It is much more balanced now and has a deep, round and soft character which is how it should be. So that means that the numbers changed to Ca of 69, chloride of 69 and sulfate still at 45. The next time I make the beer, if I were to add only 2g of CaCl and no SO4, the numbers would be Ca 52, chloride 53 and SO4 27. Can I assume that 3g of CaCl and 1g of CaSO4 is not going to be the same as just adding 2g of CaCl and NO CaSO4? In the second one the chloride is about double the sulfate. As it is now, the chloride is about 1.5 times the sulfate. I usually have this down but occasionally I find myself noodling with the best way to manage this.
On the addition of water treatment after brewday: I have done this before. I don't LIKE to muck with the beer after it's been brewed but if you ever had a beer that was out of balance, you could boil some water, let it cool, add CaSO4 or CaCl (for whichever direction you want to go) and add it to the keg. It works. It has saved a few beers here. This beer is transformed. I'm not sure how I got it wrong... I may have been looking at the wrong recipe when I did it.
