I don't really bake and we're laying off the bread, but I have a hankering for a family favorite using a very old family recipe for yeast dumplings. When done right, these dumplings boil up to the size of softballs or larger and are light as clouds. Served with roast pork, saurkraut and red cabbage. One of my all time favorite dinners. However it seems that during our quarantine, my whole local community is baking and the Fleishmann's yeast is nowhere to be found. So what say ye old brewing fellas. Can a dollop of slurry do the trick?
Btw, if you like dumplings, I'd be happy to share the recipe. Sliced with brown pork gravy, holy crap.

Recipe please!
As things are starting to relax, I'm finding yeast in the store. But that's WI and not FL.
Here is how you would probably do it... and this is based on my sourdough baking (which I've been doing long before it became the "THING" to do during Quarantine). Take a bit of relatively fresh slurry, maybe a Tablespoon or so and put it in a mason jar. Add 25 grams each of water and flour. May not see any activity, but that's ok. If there is activity, after the activity stops or no more than 24 hours, add another 25 grams. Then repeat again, but add 50 grams of each. You should start seeing activity. It'll go from a dense mass of flour and water to look like a light, airy pillow that has doubled in size. When it has reached the double size, that's when I would use it. If you have been keeping to the 1:1 ratio of water to flour, you will know your hydration levels and should be able to add it to whatever your recipe is without screwing it up too badly.
***NOTE: I have not done this. This is how I would do it, and if I ever get my ass back into brewing, I'll try it! I just know that this is what works for wild sourdough cultures, which is typically slow acting.
