My 3711 Saison is ready to come off the mangoes and since I have plenty of 22 ounce PET bottles and am bored, I'm going to go for it. It's about a 7% beer. It was put in secondary. It has dropped pretty clear (not a concern) but do you think there will be enough yeast to chew through my standard 3/4 cup of sugar or should I add yeast? If anyone might suggest a dose of yeast, keep in mind I've never done that and all I have is either Diamond or 34/70. How much would I mix in? Would I cream the yeast prior to adding to the bottling vessel etc?

I wouldn't add extra yeast. The little bit left should be plenty to carb the beer in the bottle.

Thanks. I always read big beers require it. At 7% if you say I'm good then good. If I had the keezer space I'd just keg the beer Too much on hand, damn the luck.

7% is big but not huge and in all my bottling days I never, ever added yeast. Yes, I make wimpier beers than that but some beers of mine sat in secondary for a month or more and looked filtered by the time I bottled them and there was still enough viable yeast for carbing. Keep us posted... should be interesting.

For what it's worth, a couple years back, buddy and I did a big 10% Russian Stout, aged in a freshly emptied barrel for a month or so, and bottle primed. It took longer then useal, but carbonated without a hitch. Your 7% beer will carb up just fine.

I think Saturday I'm going to bottle That will be very nostalgic. I can't remember the last time I did it with priming sugar, etc. I did bottle some stuff from keg-to-bottle but it's such a hassle and the beer ends up oxidized. How much sugar will you use?

3/4 cup (Polish precision) and I have shoot CO2 into each bottle. I rack to a keg and use a picnic to bottle. Works for me. Plus PET's are the way to go. I've made bombs.
