I'm getting into these dry strains. I just ordered two 11g packets of this Lallemand Novalager yeast. This one is supposed to be quick fermenting, high-attenuation and high flocculation. I know it was mentioned over on AHA but not sure if we had a thread on it here or not.

I bought a pack of Novalager. I plan to try it in a pils and a IPL type beer.
I’m not sure how fruity it will be. I am guessing fruity is relative and the Pilsner will be good. But, we will see.

The high attenuation suggests it will be good for styles where you expect some crisp and dry character. Imagine a malty (based on the grains and water composition) helles recipe that is fermented with a high attenuating strain like this... you could achieve that malty + crisp profile you're supposed to get in a helles. It doesn't seem like the ester production will be an issue with this Novalager yeast. Any time I brew with a lager strain I'm not familiar with, I am always trying to equate it to something but my guess is that it won't happen on this one because it's a "new hybrid" of strains. We'll see. Has anyone on here brewed with this strain yet? It's possible that the smaller packets just became available.

Novalager is in the house. Can't decide if I want to use the Baja or the Novalager first. I think I know what to expect with the Baja but absolutely no idea what to expect from the Novalager.

I haven’t ordered my next three beers worth of ingredients yet. The order will include Baja, Nova Lager, and OxBlox.
The last big thing was Kviek. Some people absolutely love it. I was not impressed. So, I am cautiously optimistic when it comes to new strains. The classics are classic because they are tried and true. Which gives me the hebbie-jeebies when the ‘better than sliced bread’ claims are made. Fingers crossed 🤞 (I really want to like these.)
I am planning to use the Nova Lager 1st in a SMaSH with Pacifica hops so a little ester production and biotransformation shouldn’t be a bad thing. The no sulfur is the real bonus because it’s one of the reasons I am not that into lagers. The Baja will be used 2nd in a fairly classic Int’l Lager. (base, Munich, corn, Cluster, Saaz) I figured that’s par for the course on it.
Likewise, I have screwed up some beer in the past with my cobbled together trifecta blend concoction so I am cautiously optimistic the ‘commercial grade’ OxBlox will not create a dumper. I am definitely planning to dose on the lower end of the recommendation. Based on their recommended dosing schedule, I was WAY over dosing which explains my negative results. Again, fingers crossed 🤞

I say that because strains of yeast come out and new hops come out and if I spend time using those (and don't care for them) then I am peeved that I strayed from what I know and like. I don't know how many hop varieties I have in my freezer but I know there are some oddballs (to me) in there like Ella, Pacific Jade, Motueka and some others that I used and they just weren't for me. I know what I like and what I want to brew and it's generally German & Czech-style beers, American styles and English ales. Lots of lagers. Not much in the way of IPAs, stouts or Belgians and some of these yeast strains meant to be used in the 80s, 90s, etc. I just don't think I'd go for. But I *DO* like to experiment with new yeast strains and the dry strains intrigue me. I feel like Novalager is going to be something I have never experienced before.

I'm going to make a very simple recipe in an attempt to showcase the Novalager characteristics. Pilsner, Vienna, one addition of Perle. This will be made here sometime in the next two weeks.

I always enjoy brewing simple recipes like that. Just something about the ease and relaxation of brew day.

By the way...I'm still waiting for you to give Baja a try...see if you think it's anything like 940.

I have them both and was going to use BAJA first but then I heard a number of positive things about Nova so I thought I would go there first. So. Many. Yeasts.

Would Novalager make a good Festbier/Oktoberfest? I typically use Omega Bayern, 2124, 838/2308 to get some German character in the beer. Does Nova bring any German character at all? Okay, here's my take on Novalager: I don't like it. I am drinking this Oktoberfest Lager that I made with it, it tastes okay, it's clear, it's balanced, etc. but it's just kind of boring to me. Maybe it's the absence of sulfur or something, not sure. It's either got "no character" or a character I don't like. I made four beers with it. Oktoberfest lager, two gold lagers with pilsner + Munich 1 (in one case) and Munich 2 in the other case and then a Vienna Lager. I'll base the rest of my opinion off of those beers but personally I don't think I would use it again.
