I’m late to answer. To me diacetyl completely overwhelms the tastes of hops and malt. It is all I can taste. To me, it tastes good on popcorn not in beer.

I know the descriptors - buttery, butterscotch - but I don't think I've ever encountered diacetyl in anything other than movie popcorn. *Maybe* I'm getting some diacetyl in those cheap flavored K-cup coffee pods?? Not sure though. So when you all taste/smell "diacetyl" in your beer, is it obvious to you? Now I rarely brew lagers, but this talk of diacetyl in S-04 piques my interest. I've trained myself to taste i, but mainly I detect it as a slick mouthfeel.

The beer from the original post is now on tap and very good. I pitched the 2 week old slurry into an amber yesterday day at 3. It had a full krausen at 6 this morning. I also using part of the krausen in a cider for my wife.

The beer from the original post is now on tap and very good. I pitched the 2 week old slurry into an amber yesterday day at 3. It had a full krausen at 6 this morning. I also using part of the krausen in a cider for my wife. It's very quick to start which is one reason I used it in a run of ales throughout the spring. I wanted something that would work quickly and predictably. I knew about the possibility of diacetyl and planned accordingly. Those quick starts really impressed me. I think that I brewed six straight weeks in a row either on Friday, Saturday or Sunday so the yeast only had between 7 and 9 days to do its important work. When a slurry is used with that kind of quick turnaround, it's going to start fast. Good luck on the amber.

Another plug for S04. I used a tablespoon of slurry in a 1 gallon batch of cider for my wife. It really turned out great. It fermented down to about 1002 SG. I back sweetened to 1007 SG. It’s a very nice cider from Walmart apple juice.
The S04 packed really tightly on the bottom of the fermenter which made transfer a breeze and the cider is crystal clear.

Right now all four of my taps have S-04 beers on them: Dark Ale, English Bitter, Blonde Ale, Pale Ale. Every one of them is fantastic, has great flavor and aroma and they're all clear too. There is ONE MORE in the on-deck fridge (a Cream Ale with Sterling) and then they're gone. But next time I'm ready to make ales, S-04 will get serious consideration. Glad the cider came out well.
