My one Pub Ale got Northern Brewer and another one got Goldings. My latest blonde got Liberty. I feel like Liberty could be a lager hop without too much trouble. Liberty was bred to be a HMF replacement so it works great as a lager hop Right... and I feel like we would benefit from it being domestic. Fresh, locally available and all that.

I know I have some Liberty. I was going to use some today to bitter a sour but I could not find it! I went through my freezer multiple times but I could not find it! It's got to be there!

Received another half-pound of Hallertau Mittelfruh this afternoon from YVH. I ordered 8 ounces and they sent 2 ounces. I notified them and they sent another 8. Nice. I have a helles and a Zoigl planned along with some other stuff.

I got some YVH 2021 harvest Cascade, Centennial, Citra, Mosaic, and Saaz today. 👍 Mmm, hot diggity. Tell me what you plan to do with the Saaz. I remember a thread (somewhere) about guys who were ordering their Saaz hops directly from a farm in the Czech Republic so they would be as fresh as possible. There was a limited supply. I have some 6.7% Sterling that I plan to use in a Cream Ale but I was just doing some homework on the parentage of Sterling and see that the majority of it is Saaz (with some Mt. Hood and Brewer's Gold thrown in) and that it was bred to be a better, fresher, higher-alpha and more disease-resistant version of Saaz. I may have known this at one point or another but it got me thinking that a Czech Pilsner with lots of Sterling could replicate that beer nicely because the Sterlings would (presumably) be fresher than Saaz that I could get. Loosely-related tangent: I have some US Saaz from Hop Heaven as well and I have used those with good results. If Liberty could stand in for Hallertau Mitt then maybe Sterling could stand in for Saaz.

I have swapped Sterling for Saaz with pretty good results.
These CZ Saaz are for my 160th brew. I retired from the 160th Avn Regt. So, this is a special beer in a cpl ways. We were known as the Nighstalkers so I figured a Czech Dark Lager would be a great beer for this occasion.
Edit: This brewday is planned after an APA, The Dwain/Tommy Blonde Ale, and then the Dark Lager.

I have swapped Sterling for Saaz with pretty good results. These CZ Saaz are for my 160th brew. I retired from the 160th Avn Regt. So, this is a special beer in a cpl ways. We were known as the Nighstalkers so I figured a Czech Dark Lager would be a great beer for this occasion. Nice. I like a Czech Dark Lager. I think I found a better fit for my 160th brewday: KY Common. It’s a beer I’ve never brewed and never tried so it will be special.
Again, it’ll be my 160th all grain brew since AL made Homebrewing legal. I was in the 160th Avn Regt Nightstalkers stationed at Ft Campbell, KY. So KY Common, a dark beer, for my 160th brew seems to be a better fit.
It will require moving most of the Saaz to a later beer but that’s OK.

It’s a cpl months out and evolution has been known to take place, but this is what it look like right now. It includes 6-row which I’ve never used and flaked corn at a higher rate than I’ve ever used. I got the idea from Brew Dudes. This is based on their recipe.

I drew up a recipe for a Kentucky Common years ago and never brewed it. I liked the concept but clearly got distracted. Please keep us posted on how it turns out.

I might try it myself soon. I have all those ingredients in the house. I’ve been wanting something to use up my 6-row and corn. PS. Is it traditionally supposed to be brewed with a common/steam/west coast lager yeast like WP810 or Wyeast 2112? "Common" would suggest that but I could be off. Otherwise I agree that the "dark lager" concept sounds lovely and it makes me want to do some more research on it and brush up on the origins, the timeframe, etc. One reason why I may NOT have made it is that I already make beers that are similar to a Shiner Bock, a Dos Equis Amber, a Negra Modelo, and I also have my Vienna Lager recipe, etc. Even with the S-04 that I'm brewing with now, I made a "dark ale" so I may have thought "I already make a beer very similar to this" and some of those recipes include corn too.

Ordered hops from YVH late on Tuesday, received early afternoon today. That's 9 packs of 2021 hops and 2 packs of yeast shipped complete, from WA to PA in less than 2 days. Shipping was $9.70 FedEx.
Can't see ever buying hops from anywhere else.
