Guys, I also heard back from Andy/Doobah/Genessee Ted and he said he would check out our new board. As a pro brewer he has a unique perspective and may give us a bit of street cred. Plus, he's a good, all-around guy. Cheers.

I order what I need, within reason, and have to Keep two house beers on tap, other then that, have creative control. It's a 1.5 BBL system, with three, 3 BBL fermenters. He orders what I need, we discuss what he wants, what I have in my brew logs, and I make it. I was full time for two weeks (got told to sit on the bench at work). So kicked out 240 gallons for him. He's going to start selling growlers to go. They had a rough time brewing at the start; bad efficiency, NO water treatment, etc. The owner has all the right gear and testing equipment; but courted me pretty hard to brew for him. I volunteered to help him get ready for opening. It's all part time. I told the owner my conditions to brew for you are water analysis and treatment minerals. He didnt blink an eye. After noodling around with the brew system. (EHERMS,and a dream to brew on once you learn it), found out where the missing pieces were; #2 in the company was swearing by beersmith for the recipes and formulation, but it wasn't calibrated to the gear, and wondering why nothing was lining up. "Well, beersmith said...." was repeated more the a few times. So, I went in and did some simple scaling and efficiency calculations. Brewhouse efficiency went from 65% to 80%. The place is called Hangman Brewery; in Northern DE. It has a spaghetti western theme in the taproom. His house beers are two variants of cream ale. "Light" and "Dark". 4.5%, and a $2 pint during happy hour. Live music on the weekends. This all before the Covid shutdowns for bars and restaurants. Have a brew night planned for Sunday- 80 gallons, from mash/pitch/clean up, takes 12 hours. Going for a NEIPA this week. So far, I made the two house beers, a pale ale, stout for him, which will be on nitro.

Dude, that's amazing. Congrats to you. I always say that good things happen to good people so there you go. Can I assume that you're keeping whatever your day job is? Or are you fully on-board with this place?

Or are you fully on-board with this place? Keeping the day job, absolutely. I got called back last week (the campus I work is shutdown for COVID-19, still is, but I'm concerned essential.) This is about 20 hours a week. Owner did ask what would I take for me to go full time. Looked him dead in the eye and said "you can't afford it."
