Looks good! How long do they bake in the Ooni? I used to make pizza every weekend but it's less frequent now...made some on Monday with an 85-90 hour old dough (high gluten flour). I use an 18x18x.5" aluminum plate and the pizzas bake in about 5 minutes. The house gets really freaking hot though with the oven preheating for more than an hour before baking.

Those look good. I've got my slow march towards a wood fired oven going. Although the new kitchen and oven will be a nice distraction through the winter (I don't know that I'll have the WFO fully built before next spring). That's a nice looking dough you have there.

They take under 4 minutes. If I have the heat up higher they can go as fast as 90 seconds. I will also do them in the oven but it makes the house crazy hot. Better for winter!

Thanks. It was so nice to stretch. I had done some a few weeks back with just AP and the difference is noticeable.

Something very satisfying about a nice, stretchy pizza dough... I see you have a pre-cast oven. If you don't mind me asking, how do you like it? What brand and model is it? Was it hard to assemble, or did you have someone do it for you?

Was it hard to assemble, or did you have someone do it for you? We did an outdoor kitchen/porch expansion about 5 years ago and the biggest part of the plan was doing a pizza oven. I did a fair amount of research and settled on this one. It's an Earthstone modular and ours is a Model 90. The stone guys installed it for me when they were doing the fireplace. We really like it. It takes forever to get hot, but once it does, it stays that way without a huge fire. It took a while to figure the whole heating/cooking process out, but I've got it wired now. My BIL did a pizza oven a couple of years ago. It's a pre-cast one covered in really pretty tile. I think his holds heat even better than mine. I can't remember who made his.
