For lunch I took the rest of the beans and threw them in a pot and added the leftover skirt steak from the tacos I made which also included some caramelized onions. Heated that up, put it into a bowl and sprinkled some shredded pepper jack cheese over it, some crema supremo and chopped green onions and ate it with tortilla chips. Outstanding. There is no end to what you can do with these. I'm doing this again and maybe using one of those other recipes. Delish!

That sounds really good. Yum. The beer probably keeps the gas at a pretty constant rate. A little beans here and there barely registers.

I was on Amazon earlier in the week looking at various chili (chile?) powders. I mentioned that this one I had contained allspice, coriander, oregano, etc. which is fine but I wanted to see what else was out there. I found some that is simply ground New Mexico Red Chile. The description clearly states "no other seasonings are added". It arrived today and it smells lovely so I plan to use this stuff the next time and possibly tilt it towards "Mexican" next time. Maybe some chipotles, cumin, crushed tomatoes, pablanos, etc.

The description clearly states "no other seasonings are added". It arrived today and it smells lovely so I plan to use this stuff the next time and possibly tilt it towards "Mexican" next time. Maybe some chipotles, cumin, crushed tomatoes, pablanos, etc. Sounds great. Mexican cornbread with that would be awesome. Could even throw some cheese in it and scoop out with fritos. Can't go wrong with that combo.

The acid in tomatoes will toughen the skins of the beans and drastically increase their cooking time! (Like 2-3 times longer!)

My imagination didn't start to kick in until the beans were close to done. While they're still soaking up water during the simmer, I just let them do their thing. I added a chipotle pepper and some chopped green onion but only at the end. You guys are making me hungarian!!
