Finally gearing up to brew the rye doppelbock I've been planning for weeks

Made a brown ale, for a test of the frozen yeast bank 2 weekends ago- FG is 1.016 (from 1.055), I'd call it a win.
Last week, made 10 gallons of Flanders Red, and underpitched with US-05 before racking to kegs full of bugs and Rum barrel chips.
Getting ready to bottle a previous 10 gallons that sat on the same cake of bugs and Rum chips for 6 months. Pulled a sample and it's tasting lovely.
I hate bottling...but the sour beers last a lot longer in heavy duty 750ml bottles vs in a keg.

Tripel today. Using Rahr Old World pils malt, which is undermodified, so I'm doing a Hochkurz mash

Tripel today. Using Rahr Old World pils malt, which is undermodified, so I'm doing a Hochkurz mash How did the Hockhurz mash work out? Rest steps and time? Were numbers hit in the end? These step mashes always interest me even if I'm never likely to actually do one.

All ten of my kegs have beer in them thanks to a crazy run of ales with 1056. I told my brewing staff to take a vacation and be ready to brew summery lagers when they get back.

I milled grain today for a Farmhouse Ale that I'm brewing for my brother when he comes down next month. I also started early with a few IPA's and 2 gummies. Hopefully, I'll be able to brew tomorrow.

Brewing a small 2.5 gallon batch of Helles Export Saturday. This is one lager style that I have struggled with in comps. Two previous versions barely cracked 30.
4.80 lbs Barke Pils 0.45 lbs Barke Munich 0.38 lbs Vienna 0.24 lbs Carapils 1 oz of Acid Malt
0.6 oz Traditional at 60 0.4 oz Mitt at 15 0.4 oz Mitt at knockout WLP 838
1.054 OG 27 IBUs
EDIT: Took gold and 2nd place BoS with this beer at New England Brewing Company's comp in CT. Scored 42/44...so finally nailed this style! Small comp, only 124 entries, but it's in a few larger ones too, so hopefully does as well.

11 lb. Crisp #19 MO 5 lb. MCM British pale 2 lb. Weyermaann Vienna 1 lb. Briess Bonlander Munich 1.6 oz. Columbus - 60 1 oz. Amarillo - 10 .5 oz. Citra, .5 oz. Simcoe - 3 1 oz. Amarillo - 1 Mosaic, Mosaic cryo, Simcoe cryo, Cascade cryo, Citra cryo - DH
no water treatment other than a heaping tsp of gypsum in the kettle

Brewed an English IPA this past weekend.
88% MO 4% Biscuit 3% Crystal 20 3% Flaked Wheat 2% Crystal 120
Perle @ 60 25 IBU (was supposed to be Challenger, but could not find my package of it!) EKG @ 15 14 IBU EKG @ 5 9 IBU EKG WP for 20 @ 170 4.5 IBU EKG 1 oz DH for 3 days
S04 yeast
Burtonized the heck out of the water. My soft water lager mind kept telling me "this is wrong", but I fought it off.
Also did a simple 1 gallon batch of Perry with Knudsen Pear Juice.
Coming up this weekend, revised version of my Dunkel Bock for NHC.
