Oddly enough, 5 to 6% is my perfect spot these days. Have a couple three is perfection imho. I make maybe 1 or 2 bigger beers a year but that’s about it.

I think my issue is that when I drink beer, I drink it at the same pace regardless of strength. That's not good. If I go out somewhere and see a nice pale ale on tap and start drinking it like it's a 4.8% helles or something but it's really 6.5%... I'll probably get lit up and go back and check the menu for the ABV of the beer I'm drinking... Oh what, sheesh, thish beeriza really, really strong or what the what the what the hellish goink on!? Ask me how I know.

That said haha, I’m considering a 5’ish pale ale and then make something I’m calling an American Strong. All in the ‘noodling’ stage at this point but North Coast Old Stock is my muse.

I got like 80% to the brewing equipment. A little more cleanup is necessary.

Yesterday afternoon, a small safe distant driveway visit with a neighbor managed to knock off the honey malt lager keg. I'll be filling it up with the 3711 Mango Saison this weekend.
On deck another use of the 3711 with the goal of mostly pilsner and a mid 4% abv. The weather is hot again. Perfect timing.

Brewday got bumped to next week, but I'm making a wakeup starter for a 1028 London Ale yeast cake that's been in my lager fridge since January.
Was going to use US-05 for the now-bumped batch (the Cascade IPA I posted about in the recipe forum) but if the 1028 is viable, that'll get the nod instead.

I have plenty of base grains... don't know what I have in my stores for other stuff. I do have hops (probably Cascade or Mt. Hood) and yeast (I certain its a packet of my standard "go to" US-05). I need to ease back into this. If I have flaked maize, I'll probably throw together my NFP Cream Ale #2 recipe.

We've brewed 5 batches in the last 4 weeks. A Blue Moon clone, Louie Demise clone (amber), Irish red, A white Stout, and a cream ale All on a Anvil electric. so far it works great!

I sent my Victoria Lager clone to a keg yesterday and chilled it overnight. Making a pale lager on Saturday with the harvested 940. It's supposed to be decent but right now I'm looking out at snow, gray and 37°.

Spent a few hours in the brewery this morning. Owner wants some beer made this weekend.
Going over inventory, which he has a bunch of stuff around. Found some Pilsner, corn sugar, Styrian Goldings and T-58.
Looks like a Tripel is in order!
