First dry hop went it last night. It was at 1.010 from about 1.080. Going to be a BIG beer .. 9.2% ish .. wow!

Nothing wrong with a big-ass beer. I like them, assuming that they are (I am going to say it) balanced.

Nothing wrong with a big-ass beer. I like them, assuming that they are (I am going to say it) balanced. I assume it will be close to balanced. It will have a lot of flavor and aroma but the bitterness will be on the lower end of the scale for sure.

Sounds nice. Are you doing a quick turnaround DH based on our new readings? DH one is in there now at 70. I will let that go 48 hours ( Saturday night) and then start to crash to 45-50. I will let it stay crashed for 36 hours then raise up to 65 for dry hop two. That will also be a 48 hour dry hop and then I will crash again for 2 days and package.

I don't remember the exact situation, but I was going to try a parti-gyle brew once, capping the mash with some dark grain for the second runnings. I ended up accidentally putting all the grain in at once... Ooops! Ended up somewhere between a brown ale and a strong porter. It actually came out pretty good!
